Michael Sindoni, Executive Chef In February 2011, Mike Sindoni was promoted to Executive Chef of AGAINN, the contemporary British Isles bistro operated by Whisk Group LLC in Bethesda, Maryland. He formerly served as the chef de cuisine under Wes Morton and assisted getting the restaurant open in October 2009. Sindoni and his culinary team deliver a menu that showcasing house made charcuterie and sustainable seafood in addition to the best local, organic and seasonal ingredients available. Prior to opening AGAINN, Chef Sindoni served as executive chef of Patina Restaurant Group’s Cervinia Restaurant in Mammoth Lakes, California. He was also previously in Texas working as the executive sous chef of the Alden-Houston hotel’s award-winning restaurant, *17, in Houston. *17 earned glowing reviews, including four out of five stars from the Houston Chronicle in 2008 during his tenure, and it was also named one of the best new restaurants in America by John Mariani in Esquire. From 2005 to 2008, Chef Sindoni served as tournant in restaurant Navio at Northern California’s only AAA Five-Diamond resort, The Ritz-Carlton, Half Moon Bay. His culinary career also includes stints at Pisces Restaurant in Northern California and Il Cibreo in Florence, Italy. In 2007 he spent two months volunteering at Tenuta di Spannocchia in Siena, Italy where he learned to butcher Cinta Senese pigs and prepare traditional sausages and salami. A native of Syracuse, New York, Sindoni graduated from Johnson & Wales University in 2002. |
